Easy Vegan Alfredo

Pasta lovers, this is a quick and easy meal that is sure to be a favorite in your household. It cost about $20 for 6 servings. Here’s what you’ll need:

  • 1 box of Fettucini noodles

  • 1 pack of Beyond Meat Sausage

  • 2 jars of plant based Alfredo sauce

  • 2 TBSP of oil (of your choice)

  • 1 bunch of fresh spinach

  • 1 onion

  • 1 red bell pepper

  • 1 pack of baby Bella mushrooms

  • 1 loaf of pre-sliced French bread

  • Vegan butter

  • Seasonings: salt, pepper, garlic powder, Italian seasoning

Instructions:

  1. Boil fettuccine noodles as instructed on the box.

  2. While the noodles are boiling, heat oil in a sauce pan. Chop onion and red bell pepper and sauté until the onions are translucent.

  3. Add chopped mushrooms and chopped Beyond Meat sausage. Now is the time to season with salt, pepper, and garlic powder, to your liking. Continue cooking for about 7 minutes. Make sure to stir to prevent sticking and for even cooking.

  4. Lastly, add in chopped spinach and cook until it is wilted.

  5. Once the noodles have cooked, drain the water and add both jars of Alfredo sauce. Then add the spinach mixture and stir until combined.

  6. For the garlic bread, preheat the oven to 400 degrees. Place sliced bread on a baking sheet. Spread some vegan butter on each slice of bread and sprinkle with garlic powder and Italian seasoning. Bake for 5 minutes and then turn your oven to broil for 1 minute to ice your bread a crusty char. Bon apetit
